Ingredients:

  • 3-4 lb pork loin roast
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground mustard
  • 1 tablespoon Dijon mustard
  • 1 cup chicken broth (for basting)
  • 1 tablespoon butter (optional, for extra richness)

Instructions:

Step 1: Preheat & Prepare

  1. Preheat your oven to 375°F (190°C).
  2. Pat the pork loin dry with paper towels.

Step 2: Season the Pork

  1. In a small bowl, mix together olive oil, minced garlic, salt, black pepper, thyme, rosemary, paprika, onion powder, ground mustard, and Dijon mustard.
  2. Rub the mixture evenly all over the pork loin, ensuring full coverage.

Step 3: Roast the Pork

  1. Place the seasoned pork loin on a roasting rack in a baking dish.
  2. Pour the chicken broth into the bottom of the dish to keep the pork moist during roasting.
  3. Roast for about 60-75 minutes, or until the internal temperature reaches 145°F (63°C).
  4. Baste the pork with pan juices every 20 minutes for extra flavor and moisture.

Step 4: Rest & Serve

  1. Remove the pork loin from the oven and tent it loosely with foil.
  2. Let it rest for 10-15 minutes before slicing to allow the juices to redistribute.
  3. Slice and serve with roasted vegetables, mashed potatoes, or a fresh salad.

Tips:

  • Use a meat thermometer for accuracy; pork loin can dry out if overcooked.
  • Add a pat of butter on top during the last 10 minutes for extra juiciness.
  • Pair with a side of applesauce or cranberry sauce for a sweet contrast.

Enjoy this Roasted Pork Loin—a dish that’s simple, elegant, and bursting with flavor!
