Beef and Rotini in Garlic Parmesan Sauce

Ingredients:

  • 12 oz rotini pasta
  • 1 lb ground beef
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup beef broth
  • 1 cup spinach, chopped (optional)
  • 1/2 cup cherry tomatoes, halved (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions:

Step 1: Cook the Pasta

  1. Bring a large pot of salted water to a boil.
  2. Cook rotini pasta according to package instructions until al dente.
  3. Drain and set aside.

Step 2: Cook the Beef

  1. In a large skillet over medium heat, add olive oil.
  2. Add ground beef and cook until browned, breaking it up as it cooks.
  3. Drain excess grease if needed.
  4. Add minced garlic, salt, black pepper, Italian seasoning, and red pepper flakes.
  5. Cook for another 1-2 minutes until fragrant.

Step 3: Prepare the Garlic Parmesan Sauce

  1. Reduce heat to low and add heavy cream and beef broth to the skillet.
  2. Stir in Parmesan cheese until melted and combined.
  3. Add chopped spinach and cherry tomatoes if using.
  4. Simmer for 2-3 minutes until the sauce thickens slightly.

Step 4: Combine Everything

  1. Add cooked rotini to the skillet and toss to coat in the sauce.
  2. Cook for another 2 minutes until everything is well combined.
  3. Remove from heat and garnish with fresh parsley.

Step 5: Serve and Enjoy

  1. Serve hot with extra Parmesan cheese if desired.
  2. Pair with garlic bread or a fresh salad for a complete meal.

Tips:

  • Substitute ground beef with Italian sausage or ground turkey for a different flavor.
  • For a creamier texture, add an extra 1/2 cup of heavy cream.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on the stovetop with a splash of broth or cream to refresh the sauce.
