  • 2 cups granulated sugar
  • 1 cup packed light brown sugar
  • 1 cup evaporated milk
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 2 cups pecan halves
  • 1/4 teaspoon salt

Instructions:

Step 1: Prepare the Baking Sheet

  1. Line a baking sheet with parchment paper and set aside.

Step 2: Cook the Sugar Mixture

  1. In a large saucepan over medium heat, combine granulated sugar, brown sugar, evaporated milk, and butter.
  2. Stir continuously until the butter melts and the mixture reaches a rolling boil.
  3. Attach a candy thermometer and continue cooking until the temperature reaches 235ยฐF (soft-ball stage), stirring occasionally.

Step 3: Add Pecans and Vanilla

  1. Remove from heat and stir in vanilla extract, pecans, and salt.
  2. Continue stirring for about 3-5 minutes, until the mixture thickens and becomes slightly cloudy.

Step 4: Shape the Candy

  1. Using a spoon, quickly drop spoonfuls of the mixture onto the prepared baking sheet, forming small clusters.
  2. Let the candies cool at room temperature for about 30 minutes until fully set.

Step 5: Serve and Store

  1. Once cooled, enjoy immediately or store in an airtight container at room temperature for up to a week.

Tips:

  • Stir constantly to prevent burning.
  • Use fresh, high-quality pecans for the best flavor.
  • If the mixture hardens too quickly while shaping, gently reheat over low heat until it becomes scoopable again.
  • For a deeper flavor, toast the pecans before adding them to the mixture.
