Seafood Basturma Recipe

Introduction

Seafood Basturma is a unique twist on the traditional Egyptian pastrami, replacing beef with fish fillets or shrimp. This dish is rich in spices and offers a delicious, aromatic seafood experience perfect for sandwiches, pasta, or as a flavorful topping.

Ingredients

For the Seafood:

  • 2 lbs firm white fish fillets (such as cod, halibut, or sea bass) or large shrimp, peeled and deveined
  • 1/2 cup kosher salt (for curing)

For the Spice Coating:

  • 1/4 cup fenugreek powder
  • 1/4 cup paprika
  • 1 tablespoon cumin
  • 1 tablespoon black pepper
  • 1 tablespoon coriander powder
  • 6 garlic cloves, minced
  • 1 tablespoon cayenne pepper (optional, for heat)
  • 1/2 cup water (to make a paste)
  • 2 tablespoons lemon juice (for added freshness)

Instructions

Step 1: Cure the Seafood

  1. Prepare the seafood: Rinse and pat dry the fish fillets or shrimp.
  2. Salt the seafood: Coat all sides with kosher salt, then place in a shallow dish.
  3. Press and cure: Cover with another dish and place a light weight on top. Refrigerate for 12-24 hours, draining excess liquid occasionally.
  4. Rinse and dry: After curing, rinse off the salt and pat dry. Allow to air dry in the refrigerator for another 12 hours.

Step 2: Make the Spice Paste

  1. In a bowl, mix fenugreek, paprika, cumin, black pepper, coriander, garlic, cayenne pepper, and lemon juice.
  2. Add water gradually, stirring until a thick paste forms.

Step 3: Coat and Dry the Seafood

  1. Spread the spice paste evenly over the seafood, ensuring full coverage.
  2. Place the coated seafood on a wire rack and refrigerate for 24-48 hours until the coating firms up.

Step 4: Serve

  • Slice the basturma-thin and enjoy in sandwiches, salads, or pasta dishes.
  • Serve with fresh bread, olives, and cheese for a Mediterranean touch.
  • Lightly grill or pan-sear for extra texture and warmth.

Storage

  • Store wrapped in parchment paper in the fridge for up to 5 days.
  • Freeze for longer storage, slicing as needed.

Conclusion

Seafood Basturma is a bold and flavorful dish that brings a new dimension to traditional cured meats. Its rich, spiced aroma and delicate seafood texture make it a must-try for any seafood lover! ๐ŸŸ๐ŸŒถ๏ธ
